Today I made brownies...
From scratch, thank you very much...
With peanut butter frosting...
Oh but these aren't just any little brownie...
They're "special" brownies...
I put something magic in them...

Forget about the thousand of calories you just consumed after devouring the entire pan.

ZUCCHINI!!!!

Okay, so we planted two zucchini plants and they are thriving... maybe a little too much so. We have zucchini coming out our ears.
Todays menu....
Breakfast
Zucchini pancakes (pretty good, actually)
Lunch
Veggies pizza's with peppers, onions, tomatoes and SHREDDED ZUCCHINI.
Dinner
Lemon chicken on the grill served with lemon peppered, grilled (you guessed it) zucchini.
Oh, and don't forget the brownies. You can eat like three and get a full serving of veggies! Like we need that right now. Can you eat too many vegetables? I have made probably 8 loaves of zucchini bread over the past few weeks and I have three Ziploc baggies of shredded zucchini in my freezer.
Help.
The zucchini are taking over.

I wish we lived closer!! I could really use home-grown zucchini about now!! Plus, I cook a lot but I DO NOT bake, so we could have a nice little trade off =]
